Salted fish is prepared by cleaning and preparing the fish, salting using dry, wet, or brine methods. It matures for 4-6 weeks, reaching 17-18% salt content and 57-58% water content. For dried salted fish, further drying reduces water content to 50-53% and increases salt content. Stored in airtight containers, it can last at least 2 years.
